I just whipped up the quickest and most delicious sauté with some beet greens that otherwise would have gone in the trash. It took me all of five minutes once I had the greens washed and chopped. I sprayed a 10″ sauté pan with olive oil cooking spray, and added 2 minced garlic cloves once it got hot. After 20 seconds (never let the garlic brown and burn), I tossed in a package of pre-washed and sliced mixed gourmet mushrooms, seasoned them with salt and pepper, and sautéed a couple of minutes. I then added the beet greens and mixed things around until they were wilty. Finally, I cranked my nutmeg grinder over the pan a few times and stirred in a few chunks of goat cheese, which got all melty. What a great lunch.
