Here is an idea for a simple way to prepare carrots that has everyone asking for the recipe. Plan on about 2 carrots per guest. Snip the top carrot greens down to about 6-8″, scrub the carrots clean and place on a cookie sheet. Drizzle lightly with olive oil and turn the carrots to evenly coat. Sprinkle liberally with salt and pepper. Roast at 400F until fork-tender and somewhat browned, about 30-40 minutes, depending on your oven. You can roast whole carrots without the tops, too, of course, but it won’t look as gorgeous.
