Do you remember the famous “big salad” from the Seinfeld show? Recently, a “Big Salad” restaurant chain emerged, and while it’s not exactly Whole Foods, it’s certainly a better choice than burgers and fries. But why not throw together your own “big salad” at home? I do it all the time for lunch and dinner. At my house, we call it “garbage” salad because we typically forage the fridge and pantry for toppings. Keep a jar of homemade vinaigrette on hand, and you’ll have an easy meal in under fifteen.
Here’s what’s on the salad pictured here, our dinner a couple of nights ago. Obviously, there are endless variations, these are just some ideas. Also, if you need something a little more substantive, serve some brown rice or other whole grain carb on the side.
