My sister Ahuva tweaked a millet burger recipe from 101 Cookbooks (an amazing food and photography blog you should check out, if you’re not aware of it) and came up with this. We couldn’t stop eating them at dinner last week. Make sure to coat the pan well with olive oil when sautéing, it gives the patties a delicious crunch that contrasts perfectly with the softer interior.
Cook about 1 c. of millet in 1+ cups of salted water til tender. (Add a little more hot water if seems dry or hard.) While that’s simmering, wrap two good-sized garlic cloves in foil and pop in a 400F oven for a half hour, then start to caramelize the onion (with a touch of salt) on low heat in 1 T of olive oil for about 40 minutes. When that’s all done, combine all the ingredients below and form patties, adding more breadcrumbs if they’re falling apart. Coat a frying pan well with olive oil and sauté the burgers for 5 or so minutes per side. We served them with a greens and avocado salad and steamed broccoli. I had to stop at 3, but I could’ve eaten more!
2 c. cooked millet
1 medium onion, diced
3 eggs, beaten
2 garlic cloves
1-2 T fresh minced basil
1/2 t salt
2 c. chopped baby spinach
1/2 c. breadcrumbs
1/3 c. feta cheese
1/2 c. golden raisins
